We decided we liked the Panda Fight Drop In theme for our website, bit also discovered it doesn't show the next event. Any of y'all know how we can edit the theme to make that appear?

You'll have to edit the layout file in the Advanced Layout Options and include the
<!--System:Countdown--> command.
Alternatively, you could add one of the side menus for the next events in
Admin > Menus > Menu Administration
.
