It would nice to see how many times a post has been editted. In addition, it would be nice to see some sort of maximum edit period, say 1 day or 90 minutes or something of that nature. This prevents people from changing posts and then saying "what do you mean you didn't get the memo? I posted it up on the forums days ago". (This *IS* the internet after all.)
I'm actually planning on setting some sort of time-limit to editing of posts for non-administrators (admins will still be able to edit posts at any time).
