When our signatures are shown in the forums, two small dashes appear on the left hand side of the post, just before the sig. They seem to be entered by default. Please remove them.

This is something that can currently be tweaked only in the Advanced Layout Options for the Thread View.

You'd have to edit the Thread View Template and remove the ticks in the signature commands.

Did that. When I use the "Test It" button, everything looks fine (the ticks are gone). When I deploy it, the ticks remain. Not sure why that is.

The last step is to head to Admin > Forum > Misc Forum Settings and set the default layout to the chosen new layout, and check the box for "Apply to all users." This will update all users to the selected layout, and make it the future default. By deploying it, you just add it to the list of eligible forum layouts.
