With my guild, everyone starts off with 500 DKP, how can I make this adjustment so the addon will reflect this come bidding time?

You'll probably want to do something to the effect of a "Mass Adjustment" or a single large raid containing everyone in the DKP system, and simply making that raid worth 500 points.
